Buddha bowl

Tomato salad : • 2 tomatoes • 1 chili • mint • 1 fresh onion • 1/2 cucumber

Vegetable puree: • 4 potatoes • 1/2 sweet potato • 1 shallot • 1 tbsp. hummus

• Beans  • 1 apple  • Romaine salad  • Arugula

Tomato salad :

  1. Cut the tomatoes, cucumber, chilli, mint and fresh onion

  2. Put everything in a salad bowl and add a little salt and garlic powder

Puree :

  1. Cut the potatoes and sweet potato into cubes

  2. Cut the shallot into small pieces

  3. Cook everything in a saucepan filled with boiling water for 20 minutes

  4. When the potatoes are cooked remove almost all the water then mash until smooth 

First plate :

  1. In a plate or a bowl put a little romaine salad and arugula

  2. Add the rice, tomato salad, beans, apple pieces, fresh onion and a spoon of hummus

Second plate :

  1. In a plate put mashed potatoes, salad and a little bit of beans
