Rice salad with tofu

A delicious and colorful salad

· 1 and a half cups of rice

· 2 cloves of garlic

· olive oil

· 1-2 avocado(s)

· cherry tomatoes

· tofu

· lemon, salt, pepper, garlic powder, veggi broth

  1. In a pan pour 1 tablespoon of olive oil and crush a clove of garlic in it. Cook for a few minutes.

  2. Add the rice then the broth and sauté for 2-3 minutes.

  3. For the rice it should be cooked according to the instructions on the box. (We put 4 and a half cups of water)

  4. Add some salt and cook (for us with a lid)

For the tofu :

1. In a frying pan put 2 tablespoons of oil and a clove of garlic to cook for 1-2 minutes.

2.Cut the tofu into a rectangle then put it in the pan, add salt.

3.When the tofu is golden cook it on the other side.

For the salad :

  1. Cut cherry tomatoes in three and cut an avocado or two in small cubes.

  1. In a bowl mix rice and the vegetables.

  2. Squeeze half a lemon, season with salt, pepper, herbs.
